Nicolas THIBAUT, chef at Les Belles Lettres, offers traditional, seasonal French cuisine. Drawing inspiration from his roots in Dijon and his extensive professional experience in France and abroad (Lyon, Le Touquet, Switzerland, and the Caribbean, among others), he enjoys adding his personal touch to French cuisine, which he adores for its culinary diversity.
A dish for every season! That’s what drives his cuisine. The Chef takes pleasure in working with high-quality meats and fish paired with fresh seasonal vegetables.

The breakfast buffet is served on weekdays from 6:30 AM to 10:00 AM in the Les Rêveries lounge for €19. It features a wide selection of pastries, cereals, and cakes, a cold cuts platter, fruit baskets, scrambled eggs, fruit juices, hot beverages, and more. For those with a smaller appetite, we offer an express breakfast option for €8 at the bar.
On sunny days, you can enjoy our terrace in the morning, at lunchtime, and in the evening!
